Carefully hand-sorted cherries undergo controlled anaerobic fermentation before being washed and dried on raised beds to build clarity and structure. Continued investment in both processing and local infrastructure supports quality while strengthening the surrounding community. The profile is vibrant and expressive, with notes of raspberry, blackcurrant, hibiscus, lemonade and mandarin curd.
