Juicy, complex and
rich
Cascaritas farm is a family project led by Moises Hidardo and his mother, third generation farmer Delmy Hernandez. Their primary focus is innovation, exclusively producing specialty coffee. In recent years, Moises has taken the lead on the farm as well as the CAFESMO (Cafés Especiales Mercedes Ocotepeque) project, a cooperative founded in 2016 operating a washing and drying station to support its 280 small holder members. Technology investments such as solar powered drying units as well as producing microlots allow them to control every detail in production. This lot was carefully sorted and pulped before a 36 hour fermentation with champagne yeast inoculation. Following the strict drying process over 15 days, with the mucilage remaining, the result is a coffee bursting with apple, grape and cherry-chocolate notes.
