Grown at high altitudes in Guji, this coffee is produced by smallholder farmers from heirloom varieties. Cherries are selectively handpicked and delivered to local washing stations, where they are pulped and sorted. The beans then undergo wet fermentation in tanks for 12–24 hours to remove mucilage and enhance clarity. After fermentation, the coffee is washed in channels and dried on raised African beds for 10–15 days. During hot days and overnight, the drying is carefully controlled with plastic covers. Once dried the beans are milled with rigorous quality control—including triple-pass colour sorting and hand sorting—to ensure consistency and quality. This washed Guji showcases a vibrant and structured cup, with elegant jasmine and orange blossom florals, crisp Granny Smith apple acidity, and a sweet, juicy blackcurrant finish.
